Both Delicious and Healthy Pinterest Recipes

Doris Hofer, a wellness coach known as Squatgirl, reinterprets tastes that are sometimes undesired due to poor health and sometimes due to their high calorie content. Let’s have a look at some of these both delicious and healthy Pinterest recipes

1. Fancy nut chocolates

  • 100 g of dark chocolate (at least 70% cocoa)
  • 1 handful of nuts (walnuts, hazelnuts, peanuts, almonds, pistachios, pumpkin seeds, etc.)
  • 1 handful of dried fruit (Gojiberry, apricot, blueberry, mulberry)

Cut the chocolate into pieces and melt it in a double boiler or in the microwave. Cool parchment paper on a tray. Divide the chocolate into 20 pieces about 4 cm in diameter using a spoon or a sachet of cream. Let the bars cool until they are dull. Garnish with the desired nuts and dried fruit before the chocolates become solid. Once completely solid, place it in a box with a lid.

2. Green cheese frittata

  • 3 eggs
  • 1 bunch of parsley
  • 1 handful of spinach
  • Half bunch of dill
  • 4-5 mint leaves
  • 3 tablespoons of cheese curds
  • 1 teaspoon of olive oil
  • Salt, black pepper

Wash the spinach and green vegetables and chop them gently. Beat the egg in a bowl. Crumble the cheese with a fork and add it to the egg. Add spinach and green vegetables. Season with salt and pepper. Heat the olive oil in a saucepan. Pour the mixture into the hot pan and fry for a few minutes until both sides are golden yellow. Take the Frittata on a plate and add avocado slices if desired.

3. Mango lassi * chia pudding (Indian fruit drink with yogurt)

  • 1 mango (fresh or frozen)
  • Half a cup of almond milk or cow’s milk
  • 1 tablespoon lime juice (lime)
  • 3 tablespoons of chia seeds
  • 1 tablespoon of coconut grater or coconut chips
  • 1 tablespoon cashews

Cut the mango and cut it. Spread half to decorate. Take half of the mango, milk and lemon juice in a bowl, making it a fine puree in the blender. Add the chia seeds and mix for 15 minutes. Remix, close your mouth and leave in the refrigerator overnight or at least one hour. Mash the rest of the mango with a fork or blender. Pour the mango paste over the pudding and garnish with grated coconut and cashews.

4. Sweet Potato

  • 1 small sweet potato (or half the big potato)
  • 1 teaspoon of olive oil
  • 1/2 cup cheese curds
  • 1 bunch of parsley
  • 3 tablespoons of pomegranate
  • 8-10 pieces of cashew nuts
  • Salt, black pepper

Preheat the oven to 180 degrees. After washing and drying the sweet potato, cut it in half and make deep cuts with a knife. Season the two parts with oil, salt and pepper using a brush. Cook the sweet potatoes for about 30 minutes. Soften, but not crushed. Wash and chop the parsley, then mix with the cheese curds. Take the baked potatoes from the plate and spread the cheese. Garnish with pomegranate and broken cashews. If desired, serve with a green salad.
